As something of a follow-on to an earlier query, I wonder if anybody can clear my head on this:
A client has a small hotel and provides me with daily till records showing the split between food, drink, accommodation etc. However, because certain items are 'booked' to guest's rooms, the sales figure never matches the amount of money taken. To date I have been basing sales figures on the actual amount taken each day, but this means I have to make an educated guess when it comes to the breakdown between the various aspects of the business. Is there some way of recording the true sales figures so that these splits can be represented more accurately? How would this then be reflected in the bank and cash accounts?
